About Bushmills 28 Year Old Single Malt Cognac Cask Whiskey
The oldest historical records tell us that whiskey originated along the north coast of Ireland. Whiskey has been made there for over 1,000 years, a craft passed down by generations of Irish inhabitants. Sir Thomas Phillips got his license to distill on those lands in 1608, making it the oldest licensed distillery in the world. A lot of whiskey was produced there — even before the governor of Bushmills, Sir Thomas Phillips, was granted the license to distill there in 1608. After all, Hugh Anderson was doing it in 1784, registering the very first trademark on a pot still."Single malt" means that a whiskey has been made at a "single" distillery and uses only "malted" barley in its recipe. Single malt whiskeys are considered the best because of the malted barley. Even centuries ago, malted barley was believed to be the finest grain for making whiskey. Whiskey was only made with barley until the 1800s, when the King of England imposed a tax on it. At that moment, most distilleries switched to corn, a cheaper ingredient, to make their whiskey. Most Irish whiskeys rely only on low-cost corn to make their whiskey to this day. But not Bushmills. Only Bushmills maintained this connection to whiskey’s origin.
A storied distillery steeped in history, Bushmills didn't make it this far by staying the same. Weathering conflict, fire, and famine, Bushmills has emerged from each trial with a newfound strength and commitment to their cause.

Today, Bushmills remains an icon of Irish Whiskey. Spearheading Bushmills' new "The Rare Casks" series is the Bushmills 28 Year Old Single Malt Cognac Whiskey, one that takes us on a journey through the illustrious career of Master Blender Helen Mulholland. One of the very first batches she worked on, she has kept a watchful eye over it ever since the spirit was distilled in 1992. Built on their unpeated single malt, this expression was first aged for 11 years in Oloroso sherry casks before being transferred to meticulously-sourced ultra-rare Cognac casks for another 17 years. Complex, rich, deep, and nuanced, this rare Irish whiskey was bottled on July 7th, 2020 at 93.4 proof.

About Bushmills
In the words of Master Distiller Colum Egan, the world’s oldest licensed whiskey is not good because it’s old, but rather it’s the other way around. Granted the royal license to distill in 1608, Bushmills is located in the village of Bushmills on the north coast of Ireland. About Irish Whiskey
Contrary to popular belief that Scots invented whisk(e)y, Irish whiskey was mentioned almost a century before its Scottish brother.
Its origin comes from the perfume distilling monks who decided to tweak the recipe a bit, creating Irish whiskey.
Irish whiskey doesn’t have a lot of rules and regulations to be considered “pure” and can be made with various grains and processes, as long as it is aged for at least three years in wooden casks and has a max ABV of 94.8%.

About Cadenhead Dufftown-Glenlivet 26 Year Old Single Malt Scotch Whisky
Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Located near the confluence of the Rivers Dullan and Fiddich, the distillery draws its water from Jock's Well, which is renown for its incredibly pure flavorful spring water (on more than one occasion, nearby distilleries — particularly Mortlach — have been caught attempting to divert water from the well to their own distillery).This Dufftown single malt Scotch whisky was crafted exclusively from malted barley, which was milled and mashed before being fermented in the distillery's wooden washbacks. Following fermentation, the whisky was distilled twice: first through a copper pot wash still and then again through a copper pot spirit still. This single malt was produced during the time Dufftown adopted the Glenlivet moniker.
Established in 1842, Cadenhead’s is Scotland’s oldest independent bottler. The company remained in the same family until 1972, when it was taken over by J. & A. Mitchell & Co. the owners of Springbank Distillery. This whisky was distilled in 1988, and bottled at 51.1% ABV. On the nose it opens up to reveal soft citrus and herbs with a hearty dose of brothy meatiness. The palate leads with spices and tropical fruits that give way to nuts and syrup and the finish is long and pleasant, fading slowly into oak spice. This is a very rare and unique limited bottling.

About Cadenhead Strathclyde 26 Year Old Single Grain Scotch Whisky
Strathclyde distillery was built on the site of an old cotton mill, in 1927 by London distiller Seager Evans. The facility was originally built as a neutral grain spirit producer for gins. Strathclyde is now Glasgow’s most prosperous distillery. In 1936, Seager Evans moved made the move into the Scotch industry with the purchase of the brand Long John.Strathclyde distillery sits in the Gorbals located in the Lowlands, on the south side of the River Clyde opposite Glasgow Green park. Over the years, Strathclyde underwent numerous ownerships, before ending up within Allied Distillers. By this time Strathclyde had been supplying some of their single grain to big names such as Ballantine’s and Teacher’s. Strathclyde is now part of the Chivas Brothers stable.
After Port Dundas shut down in 2009, Strathclyde was the only remaining whisky distillery in Glasgow for several years. Strathclyde sources its water from the Loch Katrine. Their whiskies are distilled through a 2 column system that has an analyzer and rectifier column, the columns once used for neutral production have since been mothballed.
The entire grain whisky production at Strathclyde is intended for developing blends, but there have been independent and private bottlings. This single grain Strathclyde whisky was released by Cadenhead’s. W.M. Cadenhead is an iconic whisky bottler. The original company was established by William Cadenhead in 1842.
This special small batch release was matured in a single fresh first fill bourbon cask for 26 years. Only 168 bottles of this whisky exist in the world. "A fantastic rich aromatic, smooth Strathclyde…This vintage has a deep orange amber color that almost looks like sherry cask with some rather amazing sherry-like notes after it's opened in the glass for about 10-15 mins. Very enjoyable indeed" (producer).

About Canadian Club
In 1858 Hiram Walker opened a whisky distillery that would become a North American symbol. Walker first founded his distillery in 1858 in Detroit. He had learned how to distill cider vinegar in his grocery store in the 1830s he produced his first whisky barrels in 1854. in 1891 Canadian Club, more popularly known as "CC," became the first North American spirit to receive a Royal decree, from Queen Victoria. This ordained and highly acclaimed.Prohibition forced Walker to leave the "dry" state of Michigan, and strategically transplant his distillery across the Detroit River to Windsor, Ontario. Located just over the border Walker was actually able to continue legally producing whisky when the sale of beverage alcohol was prohibited in the United States. Whisky also became one of the most smuggled whiskies in the U.S. at the start of Prohibition. The Canadian Club became a haven of clandestine activities at the peak of America’s Prohibition.
Rumor has it that CC was highly favored by the likes of Al Capone and that he had a lucrative business scheme smuggling the spirit across the Detroit River. Walker’s whisky was particularly po pular in the late 19th century gentlemen's clubs of the United States and Canada; this is where it got the name "Club Whisky".

Well-aged Glen Grant Scotch is known for its light yet complex and layered taste profile. Distilled in 1998 and bottled in 2022 after 24 years of maturation, the single ex-bourbon hogshead yielded a scant 254 bottles of the 102.2-proof Speyside single malt.

Chapter 7 has three series of expressions: Monologue, Anecdote, and Chronicle. The first are unique single casks, the second once-in-a-lifetime small batches or married atypical whiskies, the third has their aging reserves. This release is the 15th in the Monologue series. Distilled in 1990 at the Tormore distillery, it's a mature Speyside whisky at 31 years of age ― the oldest release from Chapter 7 yet. A part of the Chivas Brothers portfolio, Tormore single malt bottlings were few and far between. This is the second bottling of a Tormore single malt by Chapter 7, the first being a 17-year-old that received a Liquid Gold Award from the Whiskey Bible. Chapter 7 is an independent bottler's brand created in 2014, in Switzerland by Selim Evin, as a passion project dedicated to whisky. Inspired by his grandfather’s love of whisky, Evin started off by bottling single casks from Scotland's lesser known distilleries. Whiskies that laid foundations for well known brands, but where nevertheless, not very well known. Driven by sheer curiosity, Evin uncovered whiskies from Scotland, Ireland, and eventually began vatting them, "exploring the fascinating world of blending."Chapter 7’s Master blenders marry the hand-selected spirit in large vats. Selim Evin travels to Scotland and Ireland to hand select single casks from the inventories of the world’s greatest distilleries. Then he custom bottles each one with its own story. Every cask of Chapter 7 Whisky has its own unique character. From the wood, age, temperature, to its location in the rickhouse.

About Chattanooga Whiskey 1816 Native Beer Barrel Finished
Chattanooga Whiskey 1816 Native is a limited edition bourbon finished in beer barrels. It is a blend of barrels between 2 and 10 years old. For this expression, the distillers partnered with local craft breweries, giving them bourbon barrels to age their unique beers. The barrels were then returned and used for finishing the bourbon made from a mash bill of 75% corn, 21% rye, and 4% malted barley. About Chattanooga Whiskey
Chattanooga Whiskey was founded by Tim Piersant and Joe Ledbetter in 2011. Inspired by the city's rich distilling history, the two went on a mission to bring back "Whiskey to the People" and Hamilton County, and did not shy away from the battle to change the laws of their state in its pursuit. In March 2015, the company’s Experimental Distillery opened in the heart of downtown Chattanooga, which keeps over 100 different barrels in its aging cellar. In 2015, they released the first whiskey produced in Chattanooga in 100 years, Chattanooga Whiskey "100", and began crafting their malt-forward style of straight bourbon whiskey, Tennessee High Malt, which was released in August 2019, marking a new era in the company history. In March 2017, the company opened its second distillery in downtown Chattanooga, the Riverfront Distillery, transforming a historic car dealership into one of the largest craft bourbon distilleries in the South, with a dunnage-style heated barrelhouse with room to age more than 4,500 barrels of whiskey. This is where the distillers make their signature Tennessee high malt.Chattanooga Wh iskey’s range comprises three lines. Its signature line of straight bourbon whiskey, Tennessee High Malt, is made from four grains, including three select specialty malts. In 1816, John Johnson founded the first legal distillery on the site, and within a year Archibald Campbell had opened a second. After Johnson's death, Alexander Graham acquired Johnston's distillery for £1,100 and eventually united the two distilleries together under the Lagavulin name. Since that time, the rich, peaty water that runs down the brown burn and through the Solan Lochs into the hills just next to Lagavulin Bay has served as the lifeblood of the distillery.
Lagavulin Single Malt Scotch Whisky is known as one of the most intense, smoky single malt whiskies ever made — the peated barley used to create Lagavulin Single Malt has up to twenty times as much exposure to peat smoke than typical Scotches. After the grains used to make Lagavulin whisky are malted at nearly Port Ellen, they are milled and mashed before being fermented for approximately 72 hours.
Then, the whisky is distilled twice — first through a wash still for approximately five hours and then again through a spirit distill for approximately nine hours. This is the slowest distillation process of any Islay distillery, and it gives Lagavulin its characteristic round flavors and mellow edges.
Following distillation, Lagavulin Distiller's Edition Single Malt Scotch Whisky is aged for 16 years in the distillery's warehouses. During that time, Iain McArthur, Lagavulin warehouseman, ensures that the whisky matures evenly and consistently (McArthur has been working at the distillery for over four decades). After the whisky has matured for 16 years, it is double-barreled, or finished, in casks that were previously used to mature sherry made from Pedro Ximinez grapes. Once harvested, Pedro Ximinez grapes shrivel up to a raisin-like state, which concentrates the sugars in the grape and results in a sweet wine with legendary viscosity and intensity. This double-maturation process complements the intensely smoky notes of the whisky and adds an additional layer of complexity.
Lagavulin Distiller's Edition Single Malt Scotch has an aroma of brown sugar, roasted almonds, cinnamon and spicy cloves. The initial notes are surprisingly sweet, with subtle hints of citrus and toffee which give way to notes of nutmeg and cherries. The ever-lasting finish has deep, dark notes of smoky spices and lingers with just a touch of sweetness.
Oban Distiller's Edition Single Malt Scotch Whisky
After moving with their widowed mother to the small port city of Oban, John and Hugh Stevenson began building and repairing boats — a trade they had learned from their father — at the Oban shipyards. In the 1790s, the brothers left their jobs at the shipyard and founded a brewery in the city. In 1794, they converted their brewery into Oban Distillery, one of the oldest and most prestigious distilleries in Scotland.
For nearly a century, Oban Distillery remained in the hands of the Stevenson family. In 1883, however, J. Walter Higgin purchased the distillery and began renovations. While Higgin renovated both the distillery's equipment and structure, he did so piecemeal in order to ensure that the distillery was able to meet the uninterrupted demand for its whisky. Today, over 100 years later, Oban Distillery remains substantially the same as it was after Higgin's refurbishment.
Oban Single Malt Whisky is made using barley that is malted to the distillery's exact specifications. After the barley is malted, it is partially germinated and gently dried over a peat kiln, giving it a slightly smoky, malty flavor profile. Then, the malted barley is mashed and fermented before being twice-distilled through Oban's lantern-shaped copper-pot stills. The stills are among the smallest in Scotland, and limit Oban's production to just 650,000 liters of whisky annually.
Following distillation, Oban Distiller's Edition Single Malt Whisky is aged for 14 years in oak casks. During this beauty rest, the whisky is touched by its environment and geography — the warm, salty Gulf Stream and mild, temperate climate of Oban are reflected in the whisky. After its initial maturation, the whisky is double-barreled, or finished, in ex-Montilla Fino sherry casks. The sherry casks add notes of dried fruits, particularly cherries and strawberries, to the whisky, and complement its notes of light, peaty smoke.
Oban Distiller's Edition Single Malt Whisky has a fruity nose, with hints of grapes, citrus and a touch of smoke. The flavor is full and rich, with complex notes of tangy salt, butterscotch, caramel and toffee, which ultimately lead to a lingering, smoky and sweet finish. Oban is situated at the frontier between the Western Highlands and Islay of Scotland — the whisky has the lighter, sweeter notes of Scotland's Highlands region, while still possessing the dry, smoky style of Islay.
Talisker Distiller's Edition Single Malt Scotch Whisky
Situated on the shores of Loch Harport, Talisker Distillery is heavily influenced by its location on the Isle of Skye — it embodies the spirit of the rocky, storm-lashed island and its strong, steadfast people. The distillery was founded in 1830 by Hugh and Kenneth MacAskill, who leased the Talisker House from Clan MacLeod and eventually converted it into a distillery. When a new lease for the distillery was negotiated between the MacAskills and Clan MacLeod in the second half of the 19th century, the annual rent settled upon was £23.12 and a ten-gallon cask of the best Talisker Whisky available.
Talisker Single Malt Whisky is made from malted barley sourced from the Muir of Ord, a village in Highland, Scotland. The barley is lightly peated to approximately 18 phenol parts per million, which contributes a slightly smoky flavor profile to the whisky. Once the barley has been malted and peated, it is mashed using soft water drawn from one of the 14 underground springs that rise from Hawk Hill — Talisker has been using the same water source since it was founded nearly two centuries ago. "I'm restless at heart so you'll find me poking my nose into the mash tun at all hours," says Mark Lochhead, the distillery's manager. After the barley has been mashed, it is fermented in the distillery's wooden washbacks before being twice distilled through Talisker's copper-pot stills. The stills are equipped with swan-shaped lye pipes and worm tubs, which gives Talisker whisky its signature, full-bodied flavor profile.
Following distillation, Talisker Distiller's Edition Single Malt Whisky is aged for a minimum of ten years in used, American bourbon casks. The casks impart traditional notes of cinnamon, cloves and vanilla to the whisky. Then, Talisker Distiller's Edition is double-barreled, or finished, in casks that were previously used to mature Amoroso sherry. Amoroso sherry is a type of Oloroso sherry, but is generally sweetened with a blend of Pedro Ximénez grapes. As a result, Talisker Distiller's Edition is imbued with an aroma of cherries and apricots, which lead to a crisp, full body. Initially, the whisky has sweet, fruity flavors, along with touches of oak, peat and vanilla that ultimately fade into a lingering, sweet finish.
Talisker Distiller's Edition Single Malt Whisky earned a score of 96-100 points from Wine Enthusiast, which rated it a "Best Buy."
Dalwhinnie Distiller's Edition Single Malt Scotch Whisky
Situated along the Grampian Mountains in the Highlands region of Scotland, Dalwhinnie Distillery was founded in 1897 by John Grant, and was originally named Strathspey Distillery. In 1898, Grant declared bankruptcy and sold the distillery to AP Blyth, who renamed the distillery Dalwhinnie. The name, which roughly translates to "meeting place"in ancient Gaelic, is a reference to the cattle farmers who would pause at the distillery on their journey south to the cattle markets in Crieff and Falkirk.
Dalwhinnie Single Malt Scotch Whisky is made exclusively from freshly harvested, plump barley, which is milled and mashed with water sourced from Lochan an Doire Uaine (meaning "Loch of the Green Thicket"). The pure spring water, which travels through local peat before reaching the loch (the loch itself is situated 2,000 feet above sea level), imparts a soft yet subtle complexity to the whisky. Since no other distillery may legally use water drawn from Lochan an Doire Uaine, no other distillery is able to replicate the unique, malty-sweet taste of Dalwhinnie Single Malt Scotch Whisky.
After the barley has been milled and mashed, it is fermented in the distillery's original, wooden washbacks. While wooden washbacks are more expensive and difficult to maintain as compared to stainless steel washbacks, they absorb a portion of the heat generated during fermentation, and thus, enable a slower and longer fermentation process. Following fermentation, the wash is distilled twice, first through Dalwhinnie's copper-pot wash still, and then again through its copper-pot spirit still.
Dalwhinnie Distiller's Edition Highland Single Malt Scotch Whisky was distilled in 1996 and matured for approximately 15 years in oak casks. After its initial maturation, the whisky was double-barreled, or finished, for an additional year in casks that were formerly used to mature Oloroso sherry, before it was finally bottled in 2012. The whisky has an aroma of fresh orchards, honey and soft spices that open up to notes of malt, sweet grapes, heathered spices and honey on the palate, and lead to a long finish with touches of oak and vanilla.
