About The Singleton 19 Year Old 2021 Special Release Single Malt Scotch Whisky
Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.“Glendullan 2” is a real workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant which processes the spent lees was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.
Diageo's 2021 Special Releases Collection follows the theme of hidden stories within iconic distilleries, connected via mythical creatures depicted on the bottles. The Singleton 19 Year Old Special Release Single Malt was aged in refill American oak casks before being finished in cognac casks and bottled at 109.2 proof. About The Singleton
Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Located near the confluence of the Rivers Dullan and Fiddich, the distillery draws its water from Jock's Well, which is renowned for its incredibly pure and flavorful spring water (on more than one occasion, nearby distilleries — particularly Mortlach — have been caught attempting to d ivert water from the well to their own distillery).Singleton of Dufftown Single Malt Scotch Whisky is crafted exclusively from malted barley, which is milled and mashed before being fermented in the distillery's wooden washbacks. About Johnnie Walker
Johnnie Walker, one of the most widely distributed brands of blended Scotch whisky in the world, originated in the Scottish burgh of Kilmarnock in East Ayrshire. The story of the brand starts with John Walker, who started a profitable groceries business with the inheritance from his father. John Walker, himself a teetotaler, found his competitive edge in whiskies he blended himself, offering his customers a consistent product, unlike most other grocers, who usually sold a line of single malts that were never all that consistent. Whisky represented about eight percent of the sales when John’s son Alexander Walker took over the business after his father’s death in 1857, and when the company was passed on to the third generation, this share was already between 90 and 95 percent. The legalization of the blending of grain and malt whiskies by the Spirits Act of 1860 marked the beginning of the modern blended Scotch whisky. Johnnie Walker's first commercial blend, called Old Highland Whisky, was launched in 1867. Alexander Walker also introduced the brand's signature square bottle, and the distinctive slanted label. In 1893, the Walkers acquired the Cardhu distillery, and kept expanding through the early 20th century by buying interests in a number of distilleries. This ensured the company a steady supply of whiskies for its blends. By 1909, John's grandsons George and Alexander II had expanded the line, and sold three blended whiskies.In 1909, the company rebrand ed its whiskies, introducing the famous striding man logo and renaming the blends after the colors of their labels. By 1920, Johnnie Walker could be bought in 120 countries. The company joined Distillers Company in 1925, and, after its acquisition by Guinness, and Guinness’s subsequent merger with Grand Metropolitan, the brand is now owned by Diageo.

About Tobermory 21 Year Cask Strength Manzanilla Finish Scotch Whisky
Tobermory uses optic barley sourced from several Scottish malt makers, meticulously selected by their own master distiller. The barley is soaked in fresh water for two to three days and then spread out on the distillery floor to germinate for one to three weeks (depending on the season). The barley is constantly monitored, turned, and tended, and as it germinates, it is infused with the distinct sea mists of Mull. The barley is then milled in a traditional Porteus mill to the Master Distiller's exact specifications. They distill their whisky using the same techniques they used over two hundred years ago, using two wash stills and two low wines stills.This 21-year-old Tobermory is a well-aged single malt that was finished in Manzanilla sherry casks. Manzanilla is a paler, drier sherry with a salty flavor, meaning that the influence of the cask is different than that of your typical rich sherry. The whisky gets additional citrus and spice notes from the Manzanilla casks. Bottled without any coloring or chill-filtration at 107.6 proof, the expression is limited to around 5,500 bottles.

The town of Midleton or Mainistir na Corann (Monastery at the Weir) was established in 1180 and is situated midway between Cork City and Youghal Town. The history of Midleton Distillery stretches to 1796 when the main buildings and water wheel were built for the purpose of a woolen mill. The woolen mill enterprise was short-lived and the buildings were sold to the British government who adapted the complex to a military barracks during the Napoleonic Wars of 1803-1815. During this period, the now Distiller’s Cottage was home to the senior British Army staff who occupied the site.Following the departure of the British Army troops, the site was purchased by James Murphy who commenced his distilling business and, in 1825, the first spirit was distilled at the Midleton Distillery. Today, Midleton Distillery marries together time-honored, traditional distillation techniques with modern equipment to produce some of the finest whiskey in all of Ireland.
While it’s commonplace for distilleries in Ireland — and Scotland, for that matter — to use American (ex-bourbon), French (ex-wine) and Spanish (ex-sherry) oak casks to age their whiskey, these distilleries rarely, if ever, use indigenous oak in their aging process. In the case of Ireland, many of the country’s forests were depleted during Elizabethan times, as Britain ordered Irish oak to be used to build warships to defend against the Spanish Armada.
Now, for the first time ever, Midleton Distillery has aged a whiskey in hogshead casks made from virgin Irish oak, naming the whiskey Midleton Dair Ghaelach Single Pot Still Irish Whiskey (Dair Ghaelach means “Irish oak” in Gaelic). The casks were crafted from just ten, 130-year-old oak trees felled from the Ballaghtobin Estate in Co. Kilkenny, Ireland, and the whiskey — triple-distilled and blended from a mash of malted and unmalted barley — rested in the Irish oak casks for nearly a year after already spending 15 to 22 years in American ex-bourbon casks.
According to Billy Leighton, Midleton Distillery’s Master Blender, “The process of maturing in native Irish oak has enabled us to showcase our Single Pot Still Irish Whiskey style in a new and innovative way; the casks impart much more generous toasted wood, vanilla and caramel flavors than what we expect from American bourbon and Spanish oak, which we hope whiskey lovers will appreciate and enjoy.”

Founded in 1982 by German-born Jorg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, which is housed in an old World War II airplane hangar on a former naval base just outside San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller.Winters is widely-known for experimenting with different types of spirits — his laboratory is equipped with a 10-liter test still, which sits next to dozens of glass beakers and graduated cylinders that cover every inch of his counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (it's 14 years old already).
In 2012, Winters set out to release something truly special to celebrate St. George Spirits' thirtieth anniversary. The result, St. George Single Malt Whiskey XXX 30th Anniversary Edition, takes advantage of all of that makes St. George Spirits such a unique distillery.
St. George Single Malt Whiskey XXX 30th Anniversary Edition starts with two of the oldest barrels of whiskey at the distillery: SM-03 and BSG-73, which are aged for about fifteen and thirteen years, respectively. Winters, together with distiller Dave Smith, then blends the two older barrels with two younger barrels — Lot 12 and OCC-03 — that best showcase the characteristics of St. George whiskey. After getting the ideal blend, Winters, in a nod to St. George's early days as an eau de vie distillery, double barrels the whiskey in used pear eau de vie casks. While some whiskies are finished in former wine barrels, the unconventional pear eau de vie cask finishing lends an uncommon hint of sweetness to the single malt.
Bottled at a high 94.6 proof, St. George Single Malt Whiskey XXX 30th Anniversary Edition opens with a strong, sweet nose, with prominent notes of nutty malt, pears and other fruits. The pears remain on the palate, complemented by notes of ginger, almond and vanilla. The finish is long and strikingly smooth, with the notes of nutty malt nicely balancing out the fruity sweetness.

About American Whiskey

About The Lost Distillery Auchnagie Blended Malt Scotch Whisky
Auchnagie Malt Scotch Whisky is the first release from The Lost Distillery Company. It is a recreation of a single malt whisky produced at the Auchnagie Distillery, which was situated in the village of Tulliemet and operated from 1812 through 1912. The whisky has an aroma of earthy minerals, dried citrus (particularly peaches) and malted grains. The aroma gives way to round notes of creamy vanilla and fruits, which are complemented by undertones of peat, flowers and caramel. The finish is lingering and smooth, with a touch of smoke.Once the malt whisky used to recreate the Auchnagie single malt has been married together, it is fiinaly prepared for the bottling. "While our ten key components are critical in determining the flavor profile of a whisky we recreate," says Moss, "it's just as important to recognize what wasn't in the whisky. A century ago, there was no such thing as chill filtration or caramel colouring of the final product. That's why we don't do either of these things today."

About The Lost Distillery
Over the past century, nearly one hundred malt whisky distilleries in Scotland have been permanently closed or destroyed. Most of these distilleries were lost as a result of macroglobal conditions, such as Prohibition, world wars or financial crises. As a result, many of the unique and venerable brands in the Scotch whisky industry were considered permanently lost — until now.The Lost Distillery Company is an independent boutique Scotch Whisky company that is determined to create unique, modern expressions of the legendary whiskies that were distilled nearly a century ago. "We are obsessive about our craft and uncompromising when it comes to whisky quality," says Michael Moss, the distillery's Master Archivist. Moss is a Professor of Archival Science at the University of Glasgow and focuses on ten critical components in order to accurately recreate whiskies that were distilled nearly a century ago.
The ten critical components are the date of last distillation, the region within which the distillery was located, the distillery's water source, the distillery's barley source, the distillery's yeast source, the distillery's drying process, the di stillery's mash tun, the distillery's wash back, the distillery's still and the type of wood that was used to mature the whisky. Once these components are determined, Moss and his team of archivists and whisky makers marry together single malt whiskies from distilleries across Scotland in order to create a present day interpretation of that long lost whisky legend.
