About Highland Park 21 Year Old August 2019 Release

Situated in the Orkney archipelago in Northern Scotland, Highland Park Distillery was founded in 1798 by Magnus Eunson. The name of the distillery is derived not from the region of Scotland known as The Highlands — the Orkney islands are not a part of the Highlands — but rather from the region known as High Park, where the distillery was founded. Highland Park is an incredible longstanding whisky house, and they pride themselves on their rich Norse heritage, an essence that is reflected in their craft.

Today, over two centuries after its founding, Highland Park Distillery remains one of the few Scottish distilleries that continues to hand-turn, malt, and peat its own barley, using locally cut peat from the nearby Hobbister Moor. The malt is peated to 20 parts per million phenols, and then mixed with unpeated malt produced on the Scottish mainland. After malting the barley, Highland Park Distillery smokes it using peat sourced from Hobbister Moor, a peat bog located approximately seven miles from the distillery.

Hobbister Moor peat is sourced from floral heather bushes, which burn hotter and cleaner than the grassy peats of Islay. The peat is "absolutely fundamental in understanding the flavor of Highland Park Whisky," says Russell Anderson, the distillery manager. Together with Orkney's unique environment (the temperate, moist climate of the archipelago results in an even maturation process), the peat gives Highland Park Whisky its traditional malty flavors that are tempered by an ever-so-subtle touch of smoke.

The August 2019 release of the premium Highland Park 21 Year Old had Master Whisky Maker Gordon Motion choose 3 different casks: first-fill sherry seasoned European Oak casks, first-fill sherry seasoned American oak casks, and refill casks. A total of just 15 casks went into this intense yet balanced expression. The first-fill casks take the center stage w ith the European oak bringing spice and dried fruit, the American oak ones adding vanilla and citrus. The whisky is bottled at 92 proof.

About Godet

It was way back in 1588 that a Dutch merchant started his salt & wine business in La Rochelle, a harbor town in Western France. His name was Bonaventure Godet and he is counted among the first to start distilling his wine in order to minimize the cost of transportation, receiving the right to do so from Henry IV of France. La Rochelle is where the Arab distillation techniques were first used with locally-produced wine, so it is considered the birthplace of cognac.

About Cognac

The white wine from the specific grapes (Ugni blanc) has to be doubly distilled in a copper pot still before being aged for at least two years in oak casks from which the wood can only come from two specific forests in France (Limousin or Tronçais).

About Willett

For the Willett family, distilling craft whiskey is a family tradition. John David Willlett began distilling at the Moore, Willett & Frenke Distillery just outside of Louisville, Kentucky, during Reconstruction. In 1898, his son, A. Lambert Willett — who was just 15 years old at the time — began apprenticing with his father. Eventually, Lambert purchased a farm on the outskirts of Bardstown, Kentucky, and began construction of the Willett Distilling Company in the spring of 1935. About The Singleton of Dufftown 54 Year Old Single Malt Scotch Whisky

Glendullan is situated in Dufftown, the Whisky capital of the world. As one of the busiest Whisky epicenters, it is home to some of the greatest Scotch Whiskies ever created. Founded in 1898, by William Williams & Sons from Aberdeen, the distillery was actually decreed by King Edward VII in 1902. Like most distilleries, Glendullan has a history of ownership changes and renovations. In 1926, the distillery was bought out by Distillers Company Limited, then switched hands to Scottish Malt Distillers in 1939. By 1962 the distillery was renovated, and only a decade later a new facility was constructed near the original site. In 1985 the original facility was mothballed.

“Glendullan 2” is also a workhorse, putting out 4 million liters of spirit per year, producing several labels. The distillery itself has official bottlings and has been producing the Singleton brand since 2007. A bioplant, which processes the spent lees, was also opened on-site in 2014. The distillery has 3 wash stills with an impressive capacity of 33,700 liters, and 3 spirit stills with 23,800 liters of capacity. They source their unpeated maltings from Diageo's industrial site, and the mashing takes place in a 12-ton mash tun.

The Singleton Paragon of Time series features their oldest and rarest whiskies. This expression is the oldest release from The Singleton to date, having been crafted more than half a century ago in Dufftown, each process taking its time, the barley malted and turned by hand. The oak butt cask was hand-filled on October 31st, 1966. It was finally matured in a Pedro Ximenez sherry-seasoned cask for an additional sprinkling of richness. Finally, the whisky was bottled at 88.2 proof.

About The Singleton

Situated in the Speyside region of Scotland, the Dufftown Distillery was founded in 1895 by four wine merchants who, together, purchased a stone built saw and meal mill and converted into a distillery. Located near the confluence of the Rivers Dullan and Fiddich, the distillery draws its water from Jock's Well, which is renowned for its incredibly pure and flavorful spring water (on more than one occasion, nearby distilleries — particularly Mortlach — have been caught attempting to divert water from the well to their own distillery).

Singleton of Dufftown Single Malt Scotch Whisky is crafted exclusively from malted barley, which is milled and mashed before being fermented in the distillery's wooden washbacks. Following fermentation, the whisky is distilled twice: first through a copper pot wash still and then again through a copper pot spirit still.

About Johnnie Walker

Johnnie Walker, one of the most widely distributed brands of blended Scotch whisky in the world, originated in the Scottish burgh of Kilmarnock in East Ayrshire. The story of the brand starts with John Walker, who started a profitable groceries business with the inheritance from his father. John Walker, himself a teetotaler, found his competitive edge in whiskies he blended himself, offering his customers a consistent product, unlike most other grocers, who usually sold a line of single malts that were never all that consistent. Whisky represented about eight percent of the sales when John’s son Alexander Walker took over the business after his father’s death in 1857, and when the company was passed on to the third generation, this share was already between 90 and 95 percent. The legalization of the blending of grain and malt whiskies by the Spirits Act of 1860 marked the beginning of the modern blended Scotch whisky. Johnnie Walker's first commercial blend, called Old Highland Whisky, was launched in 1867. Alexander Walker also introduced the brand's signature square bottle, and the distinctive slanted label. In 1893, the Walkers acquired the Cardhu distillery, and kept expanding through the early 20th century by buying interests in a number of distilleries. This ensured the company a steady supply of whiskies for its blends. By 1909, John's grandsons George and Alexander II had expanded the line, and sold three blended whiskies.

In 1909, the company rebranded its whiskies, introducing the famous striding man logo and renaming the blends after the colors of their label s. By 1920, Johnnie Walker could be bought in 120 countries. The company joined Distillers Company in 1925, and, after its acquisition by Guinness, and Guinness’s subsequent merger with Grand Metropolitan, the brand is now owned by Diageo.

"You have to be careful here on the malting floor," says Eric Tait, Highland Park's Maltman. "You find it can get a wee bit slippery underneath. I have to turn the malt every eight hours to prevent the roots getting tangled and to get it all aerated properly. The airing also helps it to grow. The malt will be on the floor for seven days, and I'm running five floors at the moment." After malting the barley, Highland Park Distillery smokes it using peat sourced from the nearby peat bog called Hobbister Moor. The unique peat gives Highland Park Whisky its traditional malty flavors that are tempered by just a subtle touch of smoke.

This collection features both The Dark and The Light expressions of the two-part series that celebrates the Orkney climate and the distinctive influence it has on its whiskies. The Dark is an award-winning 17-year-old single malt Scotch whisky that has been matured in first-fill European oak sherry seasoned casks, delivering a distinctly deep flavor, packed with ripe cherries, toasted almonds, and dark chocolate overlaid with hints of smoky peat.

The Light is matured exclusively in refill American oak casks, highlighting the bright and fruity side of the legendary Highland Park spirit with flavors of creamy vanilla, baked pear, and nutmeg that meld luxuriously with rich aromatic smoke. Bottled in a beautifully embossed green gl ass vial, its serpent dragon design is inspired by the great Norse sagas, embracing both the high sun of the summer solstice and the low sun of the winter solstice. Both of these expressions have earned the coveted Double Gold medal at the San Francisco World Spirits Competition.

About Black Tot

Founded by Sukhinder Singh, Black Tot was inspired by a Royal Navy tradition that started in the 1600s and lasted until 1970. During that period, a tot of rum was distributed daily to the sailors, instilling them with the neccessary courage to fight battles. Si ngh tracked down and sampled examples of original blends of Caribbean Rums from collectors and had them analyzed. This is how the story Black Tot was born. Singh modeled their flagship rum after the original navy dram, honoring the historic drink and creating a new, modern spirit.

About Rum

Rum history allegedly started in the Carribiens in the 17th century when they started to ferment and distill molasses, a byproduct of sugar production. Most of the Rum is aged in oak or ex-wine casks, giving its color and flavor.


We distinguish between 4 different Rum categories, where white or unaged rum is mainly used in cocktails, while dark, spiced, and añejo (aged) rum are mostly enjoyed neat.

About Rye

About Hakushu

In February 1899, Shinjiro Torii — the father of Japanese Whisky — opened a general store in Osaka, Japan, that traded in imported wines. Within a decade, Torii began producing his own sweet grape wine called Akadama Port Wine, which became wildly popular throughout the country. Following World War I, Torri — fascinated by whisky his entire life — decided to expand his business and began constructing the Yamazaki Distillery, Japan's first-ever whiskey distillery.

Fifty years after the construction of the Yamazaki Distillery, Keizo Saji inherited his father's vision and began construction of Suntory's second distillery. Although inspired by traditional Scottish distilleries, both Torii and Saji envisioned a uniquely Japanese approach to distilling whisky. As a result, the Hakushu Distillery is situated amidst the deep forests of Mount Kaikomagatake in Japan's southern Alps and enjoys a unique microclimate as a result of being surrounded by nearly 6,000 varieties of plants and thousand-year-old granite rocks.
